1.
Pound
flour into steak.
Grease
pan thoroughly.
Fry in
heavy frying pan.
Brown
meat well on all sides.
Add
stewed or canned tomatoes to cover meat.
Cook
very slowly until meat is tender enough to cut with fork
— two hours or more.
Add a
little water from time to time to keep meat from sticking to
pan.
You
can add mints, green peppers, sliced onions, or mushrooms.
*This
dish can be cooked on top of the stove or in the oven.

Preheat oven to 300 degrees.
Trim
the edges of a ¾ inch thick steak.
Rub
with a ½ clove of garlic.
Pound
both sides of the steak with a heavy plate.
Add as
much seasoned flower that the steak will hold.
Cut in
pieces or leave whole. Iif you leave whole cut the edges to
prevent curling.
Heat
in a heavy large casserole dish ¼ cup of bacon or ham drippings.
Sear
the steak on one side until brown.
Then
turn over and add a ½ cup of finely chopped onions and 1 cup of
finely chopped carrots, peppers and celery.
Allow
vegetables to brown and then add ½ cup of strained boiling
tomatoes.
Next
add 1 cup of stock and cover casserole dish and place in oven
for two hours or more.
Remove
steak to a hot plate, strain the drippings and make pan gravy
and serve.
*Can
also be made in a pressure cooker.

3 lbs.
steak.
Add 2
cloves of garlic with the flour and pound into steak.
Sear
steak on both sides in butter, beef fat or bacon fat.
Add 2
onions sliced and add 1 to 1 ½ cups of broth, water or wine.

Use a
round or chuck steak 1½ to 2 inches thick.
Mix ½
cup of flour, 2 tsps. of salt, ½ tsp. of pepper and pound this
mixture into steak.
Sear
steak on both sides slowly.
Mix 1
cup of canned tomatoes, and a chopped onion.
Heat
tomatoes and onions to a boil.
Pour
onions and tomatoes over steak and put a heavy lid on it and
cook in moderate over 350 degrees for an hour and a half.

Cut a
round steak ¾ to 1 inch thick.
Pound
flour into steak (increases tenderness when amount of steak
increases).
Brown
quickly in pressure cooker with oil.
Add 1
can of tomato soup and 1 can of cream of mushroom soup.
Add
sliced onions and 3 Tbsps. of salt.

Pound
flour into steak.
Brown
steak and simmer on top of stove with other ingredients for 2
