The
Cake Mix Doctor (Workman Publishing Company 1999; ISBN
0761117199) is a cookbook by Anne Byrn with good
suggestions for the use of fruit in baking. It contains
suggestions for folding in fruits, and the idea
of using fresh zest from oranges or lemons to perk up a cake
mix.
MAKING PINEAPPLES TASTE RIPE
Take a
pineapple that doesn’t taste ripe and put it into a simple syrup
for a while.
MANGO SALSA
Pear,
Pineapple, Mango, Olive Oil and Cilantro
TIPS FOR MANGOS

Put fresh mangos in the freezer

STEAK AND MANGO STIR FRY
Marinade

tablespoon soy sauce

Seasoning
Mix
the marinade in a bowl.
Slice
the steak into 6mm thick fillets and marinate for at least 15
minutes.
Mince
the ginger and spring onions and slice the mango into cubes 2x1
inches.
Mix
the seasoning.
Stir
fry the steak for one minute in 4 tablespoons of hot oil.
Drain and remove to a plate.
Wipe
out the wok with a paper towel
Sizzle
the spring onions and ginger in 2 tablespoons hot oil (can save
some spring onions to sprinkle on the top for contrast).
Add the mangos and gently combine for 5 seconds before stirring
in the seasoning. Add the steak and serve immediately with
rice.
MANGO DESSERT
Purée
mangos. Into a "puddle" of mangos on a plate, pile fresh
strawberries (slightly sweetened) on top.
CARROT AND ORANGE SOUP
Onion
and carrots are cooked.
Zest
of orange is added.
Purée
and the mixture and thin it down, then add orange juice at the
last minute.
Add
cream at the last minute also.
Try
seasoning with cardamom, cinnamon, nutmeg.
